Day 4 – THU, 5/9

Here is my food from yesterday (WED). I’ll try to be better about posting my stuff too, in case it helps. Although several of our Challengers are giving ME ideas!

B – coffee w/ cream and raw sugar … (but I think I’m going to take a hiatus from this for a while. Mornings are so crazy at my house, I never get to drink it while it’s hot anyway. At least not without microwaving it 15 times. And mornings are the best time for me to get my broth in. So I think I’m going to make an ole switcheroo for a while. Homemade broth in the mornings instead of coffee with cream and sugar. Waaaaaaaaay better for me!) … 2 eggs fried in ghee; 1 homemade sausage patty (pastured pork from Al Rosas mixed with this spice blend); diced organic potato, cooked in ghee with some leftover broccoli.

L – Mixed greens from my co-op with leftover baked chicken, salsa, creamy dressing made from my homemade mayo, lime juice, cilantro, salt and pepper + about 1/4 of an avocado.

D – An adapted version of this Honey Mustard Cuban Pork Burger. (It calls for breading the patties in crushed plantain chips, which I did not do. I didn’t want to buy plantain chips b/c anything at the store is fried in a weird seed oil, and I didn’t have time to fry my own.) Instead, just mixed the pork with about a cup of choppped cilantro, garlic powder, onion powder and salt/pepper. Then fried the patties in ghee.

Side dish is beets and kale – both from my co-op. They were both about to go bad, so I just shredded the beet in my food processor with 1/2 a red onion (that was also about to go bad), then sauteed it with the chopped kale in more ghee, with some salt and pepper. Lesson here: Never let organic (or any) produce go to waste! When things are looking a little sad, just chop ‘em up and throw ‘em in a pan!

    Off to Germany for my vacation … Will try to be as good as possible with paleo…but I make no sacrafices with the German beer! :)

    1 tbsp fish oil
    Breakfast – 4 egg scramble w/ leftover pulled chicken and hot sauce, black coffee
    Snack – 1 hard boiled egg (boiled 9 last night – bulk is awesome!), almonds, cashews
    Lunch – leftover 1/2 chicken breast (the spaghetti squash added a nice mild sweet flavor to the mix, quite pleasant), diced green pepper and chopped red cabbage salad with walnuts, a dash of Ms. Dash, and a splash of Italian dressing (a little bit of HFCS here, but using up what’s in my fridge, and I only used a little).

    Breakfast- 2 cups of coffee with half & half. Two egg omelet with 2 slices of ham and broccoli, leftover salsa on top.
    Lunch- leftover spicy sausage/roasted veggies with a handful of carrot sticks
    One afternoon coffee w/ half&half
    Dinner- dry rub hamburger with sautéed mushrooms and a romaine lettuce bun; small baked sweet potato with butter
    Water all day

    Lunch- leftover spaghetti squash with meat sauce ( with vension meat), green beans, 8 strawberries
    Breakfast- 2 eggs fried in butter (butter from Grass fed cows)
    Snack-8 apples slices with left over Italian stuffed belk pepper
    Dinner-leftover spaghetti squash with carrots.
    Water all day.

    Well no more wine for you, missy. Even tho I only had a glass last night, it was pretty late (for me) and I literally did not sleep a wink which more or less cratered today….so….

    b=frittata with veggies, coffee with tbsp cream
    s=1/2 grapefruit, 1/2 avocado
    l=chicken breast w/ BA salad with o/v
    s=here’s where the sugar cravings caused by no sleep come in–cookies and Diet Dr. Pepper
    d=lean pork, 1/2 sweet potato, tbsp organic butter, mixed zucchini and yellow squash, strawberries
    s=hopefully none…..

    Headache was better yesterday so I swapped out beef jerky for plantains again today. Our administrative assistant bought us fresh croissants with coffee today. Argh. My strategy in these situations is to eat 2 small bites, then wrap it up under the pretense that “I’m saving it for my snack this afternoon.”

    Breakfast – egg/cauliflower wrap with sausage, coffee with cream
    Snack – Plantains and 1/2 a mashed avocado (and 2 bites of croissant)
    Lunch – Salad from Chipotle with carnitas, guacamole, salsa and pico de gallo
    Snack – nothing, which I paid for later
    Dinner – Leftover grilled steak, avocado slices and plantain chips
    Evening – Paleo margarita
    Unsweetened iced tea, water and lime seltzer for beverages

    L: meatloaf, mixed veggies and spinach, unsweetened iced tea
    D: left over chicken and mashed sweet potatoes, banana, water
    I’m about to go over to a friend’s house and I will have wine-hopefully not too much!

    Lunch – Shredded garlic beef/ spring mix salad
    Dinner – Sliced grilled beef with plantains and avacado

    Bkfst: 2 paleo pumpkin pancakes, 1 boiled egg, 2 slices of bacon and 5 strawberries, coffe + 1 tbsp of coconut milk

    Lunch: Cauliflower “Fried Rice”, 1 apple, 1/4 slice of avocado

    Snack: 2 strips of bacon and 1/2 a banana

    Dinner: Roasted chicken breast, greens with tomato and carrots in homemade balsamic vinegraitte, 1/2 an avocado, and a small piece of frozen pineapple

    Water and 1 sparkling water with dinner

    Quick question, I see some of you guys using/eating plantains. Are you guys using green or yellow plantains, and are you frying or baking them?

      From what I’ve found you usually buy them green and as they really rippen (get sweet) they turn yellow and brown. Ive tried frying them in coconut oil both colors. Green is still good just more firm. Yellow is super sweet and soft on the inside. I like them yellow/brown the best. I usually buy them green and then as they turn yellow fry them.

      Make them how you usually do. If you’re going to fry them use coconut oil. Its probably best to use them when they’re green so you’re not taking in so much sugar and sweetness. I could be wrong. Us latinas need to have our plantains! :)

        Haha Delfina, that’s exactly what I was thinking. I’m just excited I can eat plantains every once in a while!!

        • Absolutely! They’re a “safe starch” in my opinion. Two keys: (1) “every once in a while” is right. (2) Best served post-WOD. Enjoy!

    Breakfast: Got a late start after chatting to long post workout, protein smoothie with almond milk/cup of fruit
    Snack: Avocado chicken salad
    Lunch: Pork loin with hot sauce, avocado & cherry tomatoes with cilantro and lime (This was amazing!)
    Snack: One orange
    Dinner: Shredded beef with cabbage and lime

    Coffee with truvia and a cream. Still need to grab some organic full cream to switch too..

    Lots of water.

    On the go day…Beef Jerky, Chicken Ench. Stew, Unsweetened Tea, Water

    I grabbed spoonfuls of Stew running in out today and keep a bag of Jerky in the car.

    Tomorrow is Field Day so it will not be much better…

    today was a not so good day..i have meetings on thursdays and it totally threw me off…
    BFAST-2 eggs fried, 3 bacon..iced black coffee
    LUNCH-meeting at Ricky P’s, had a grilled chicken salad with balsalmic vinegrette dressing..instead of dumping the dressing I dipped my fork in the dressing every couple bites..

    Here’s where it gets bad:
    Snack 1-8 frozen dark chocolate covered banana slices
    Snack 2-4 handfuls of dark chocolate chips and about 20 sweet potato tots

    DINNER-Half a chicken from Yaya’s w/ double salad side. Tbs of their dressing. It was just enough to flavor the salad. I am super full though from all that chicken.

    Breakfast: 3 fried eggs in bacon fat and 3 strips bacon. Oh how I missed bacon!!! Water to drink. Funny thing happened, went to Starbucks to get a coffee and left my wallet at home, probably for the better since I never get my coffee without some sort of flavoring……and cream…….and sweetener.
    Skipped lunch, left work early and took a nap instead.
    Did double duty at the gym today, feeling better and energy levels are coming up…..finally. Last week was rough, it was like hitting a wall everyday, sleep pattern was off, I was sore and just felt SHITTY!!!
    Dinner was a blackened chicken salad with hot sauce for dressing and veggies. Been drinking tons of water and just can’t seem to get enough

    Went to bed still hungry from night before. Appetite low in morning, could not force down more leftovers. Had about 4 bites & teaspoon almond butter.
    Few hours later Met friend @ panera, had egg sandwich without the bread. coffee w usu 1 teaspoon cream $ raw sug.
    Lunch: can of wild tuna, 1/2 avocado, and 12 black corn chips. Small apple. Cup of coconut water, and plain water. Starting to feel better than in morn but overall tired/flat feeling.
    Few shot blocks than a run
    Dinner: baked chicken, 4 oz
    Salad w tomato & vinaigrette dressing. 1 TBS almond butter.

    B: Bulletproof coffee, half avocado, 2 strips of bacon and 2 eggs.
    Snack: hand full of grape tomatoes. Peach- pear sparkling water
    L: for some reason the thought of food around lunch time was not appealing whatsoever. (breakfast was around 9:45) Water.
    D: Broiled pork chop, with baked eggplant (coconut oil, basil, garlic & onion powder) and 2 roma tomatoes. Water.

    Breakfast- 3 cagefree scrambled eggs with turkey ham, green n red peppers white onions and 2 slices of bacon all cooked in coconut oil

    Lunch- they had lasagna at work but I skipped lunch .. wasn’t hungry… ate half a chicken breast than i had in my lunch bag at around 3pm

    Dinner: Half a NY steak from the fresh market with sweet potato and sautee veggies (zuchinni, broccoli n squash) all seasond with garlic and other yummy stuff

    Lots of water!

    lunch was a half a piece of chicken and a turkey meatball
    dinner was steak and chicken salad with avocado on it… then I had a scoop of almond butter…… high quality h2o all day long… coffee and a shot of expresso

    L – spinach and tomato salad with balsamic dressing. Half roasted chicken breast with squash and red potatoes.

    Snack – handful of cashews and half of a tomato and half of an avacado.
    Water to drink all day.

    0400- pre gym laura bar
    0800- pre-maid breakfast for work- 2 eggs scrambled in bacon fat with sweet potatoe mixed in. 2 strips bacon and (2 sausage from cafeteria, because I was still hungry)
    1300- lunch left over spicy beef and peppers over spinach. 1 plantain in coconut oil
    1700 Snack- a bag of blue diamond natural almonds- no salt
    2000 Dinner- left over chicken and squash pesto, dessert 4 strawberries
    I feel like I am eating ALOT of food…. every day… and I’m still hungry. I haven’t lost a pound yet, but I’m not craving anything crazy sugar just yet. I feel like this is how I have been mostly eating, except that i would have chocolate every day :) any suggestions, or what do you think is going on? I feel like my stubborn baby fat should be gone… was it really the chocolate and SOBE waters? This is helping a lot though> i’m a much better planner and i’ve cut out the amount of fruit I use to eat.. :)

      and 128 ox of water!- i litterally feel like my stomach is swollen, I can’t even suck it in if I try right now….

    steak, italian yellow squash with onions sauteed in coconut oil. Fresh okra sauteed in olive oil. Steamed broccoli. handful of Incan golden berries for dessert. Water, wine. (totally deserved the wine after a clothes shopping trip to International plaza with Victoria and her BFF. Missed the gym due to this excursion. Had to happen. :) She made a 4.0 so SHE deserved it.

    L: 1/3 lb. of smoked salmon salad (w/ mayo and various greens and spices), small porion of shredded broccoli and cranberry salad. Tasted like some sugar in there.
    D: Same as Priscilla.

    Lots of water all day.

    S1 (after workout): Rest of the bottle of green machine, 2 eggs cooked in bacon fat.

    L: Small avocado, grilled white meat turkey burger on a portobello with yellow mustard, baked plantain chips, 2 lemonheads

    S2: 1/4 cup raw cashews, 3 small clementine oranges

    D: Small package of blueberries, Coconut curry chicken soup (mom made it for me!), leftover duck salad with lemongrass dressing

    L- Romaine with 2 slices avocado, 1/2 tomato, 3oz sirloin, 1/4 cup cauli mashed
    D- Romaine with 4oz turkey burgers, 1/2 tomato, 2 slices avocado, 2 mini sweet bell peppers and since I’ve cut dairy out and was craving it, I mixed 2tsp sour cream with a couple squirts of Srirachi sauce as a spicy dressing for the turkey burgers.
    Water all day

    Breakfast – bacon and grapefruit juice
    Lunch – a dozen olives, handful of baby kale and a sliced avocado, no dressing, with about 10 breadless chicken wings
    I had a small cup of coffee with 2 Tbsp. of coconut oil after lunch.
    Afternoon of hanging snatches and handing cleans with a WOD afterwords.
    Dinner – a salad of lettuce, one hard boiled egg, bacon and a 6 oz piece of blackened white fish with a balsamic vinaigrette. The dinner was at Hooters.

    Breakfast: Protein, Strawberry and 1/2 banana smoothie; handful of grapes

    Lunch: Protein Pancake and Bacon, organic apple butter

    Snack: a handful of potato chips (sorry! they were reduced fat, though–i’m going to need to buy some almonds for those salty, study break snacks)

    Dinner: Quinoa, Chicken & Chicken Sausage, Carrots

    bad night..didn’t leave work last night til 11:30..could sleep til 2..woke up for gym at 530 but roommate was in bathroom and I feel asleep til 7 with just enough time to drive my son to school..uggg

    L- burger no bun with steamed mushrooms and yellow squash(using water and coconut oil, fresh garlic&sea salt)

    Bacon for breakfast, grilled chicken breast for lunch, carrots and celery for snack, steak and broccoli for dinner, carrots snkk and chocolate covered bacon for a treat. Pepsi mid afternoon, but about 80 oz of water throughout the day.

    I started my day @ 3:30 so everything is dinner IMO:

    2 hard boiled eggs
    1 chicken leg + grilled onions
    Big ass salad
    1c Greek yogurt plain + homemade coconut tapioca
    Coffee + cream x 3
    1/4c of nuts

    Snacked a little last night @ work. Didn’t succumb to cake- just spooned some frosting from side :P Nutella and cream cheese frosting. I hate you.

    It’s my last night at work and some coworkers brought in snacks..,had a handful of wheat thins dipped in spicy hummus (I know, I know both not smart choices but at least I kept it to a small amount) the physician bought us all Thai food for dinner…chicken pad Thai with rice noodles (I ate less than half the order, why do places serve so much food???). oh and one piece of dark chocolate. 4L of water
